Tortilla Soup Recipe from the PathWays Cookbook

  • 1 Chopped Onion
  • 1 Clove Garlic
  • 2 Tbsp. Oil
  • 2 Cans of Chicken Broth
  • 2 Cans of Beef Broth
  • 1/2 Cup Tomato Juice
  • 1 Tsp. Cumin
  • 1 Tsp. Chili Powder
  • 1 Chopped Jalapeño Pepper
  • 1 Tsp. Salt
  • 3/4 Tsp. Worcestershire Sauce
  • 1 Cup Chicken (Chopped). Canned is okay too.
  • 1 Can Diced Tomato (spicy if you can find them)
  • Monterey Jack Cheese
  • 1 Avocado Cut in Small Pieces
  • 1 Bag of Tortilla Chips

Sauté onions and garlic in oil for a couple of minutes. Add beef and chicken broth, add remaining ingredients and simmer for 30 minutes.

Add chicken and simmer for 10 more minutes.

Crush tortilla chips in bottom of bowl, add avocado, soup and top with Monterey Jack Cheese.
